- 1 tbsp olive oil or butter
- 1/4 cup sugar
- 1 large bell pepper
- 1 medium eggplant or 2 small zucchini { or both}
- 1 large onion,sliced thick
- 3 cloves garlic, pressed
- 1/2 pounds carrots,chopped
- 8 tomatoes, cut into quarters
- 2 cups stock or water
- 2 cups kidney beans
- 2 cups green or yellow beans,chopped
- 1/4 cup salsa or chili chutney,1 tbsp honey, 2 tbsp chili powder
Add all veggies, beans, water and seasonings to a medium pot.Simmer for 30 minutes or until veggies are tender. Season with salt and pepper if desired.
