  • 1 tbsp olive oil or butter
  • 1/4 cup sugar
  • 1 large bell pepper
  • 1 medium eggplant or 2 small zucchini { or both}
  • 1 large onion,sliced thick
  • 3 cloves garlic, pressed
  • 1/2 pounds carrots,chopped
  • 8 tomatoes, cut into quarters
  • 2 cups stock or water
  • 2 cups kidney beans
  • 2 cups green or yellow beans,chopped
  • 1/4 cup salsa or chili chutney,1 tbsp honey, 2 tbsp chili powder
You can add other veggies as desired {eg potatoes, shiitake mushrooms etc} Slice pepper, zucchini/eggplant, coat with the oil/butter and grill until tender.

Add all veggies, beans, water and seasonings to a medium pot.Simmer for 30 minutes or until veggies are tender. Season with salt and pepper if desired.
